📝 What You’ll Need:


🔸 For the Chicken:


2 boneless chicken breasts or thighs


1 tbsp olive oil


Juice of half a lemon


1 tsp garlic powder


½ tsp salt


½ tsp black pepper


½ tsp paprika


½ tsp dried oregano



🔸 For the Vegetables:


1 cup broccoli (cut into florets)


½ cup cooked beetroot (sliced)


½ cucumber (sliced)


1 medium tomato (cut into rounds)


A few lettuce leaves

1 tbsp olive oil


1 tbsp lemon juice


Salt and pepper to taste

1️⃣ Marinate the Chicken:

Combine olive oil, lemon juice, and spices in a bowl. Coat the chicken well and let it sit for 15 minutes.


2️⃣ Grill Time:

Heat a skillet or grill pan. Cook the chicken on both sides (5–6 minutes each) until it’s nicely golden and cooked through.


3️⃣ Steam the Broccoli:

Lightly steam the broccoli for around 3–4 minutes. It should still be bright green and a bit crunchy.


4️⃣ Build the Plate:

On a plate, arrange the fresh veggies — beets, cucumbers, tomatoes, lettuce, and the steamed broccoli.


5️⃣ Finish with Dressing:

Drizzle the veggies with the olive oil + lemon dressing. Season with a touch of salt and pepper.
